Go Ahead, Eat a Cupcake. It’s Good For You!

About 10 years ago, Christina Ciaccio decided she wanted to find a way to be a healthier and happier person, so she began her research in the world of health and nutrition.  She became aware of gluten intolerance and realized that she, in fact, had a lot of the ailments associated with it.  Throughout this journey, she also realized refined sugar, dairy, soy, and grains caused her discomfort as well and was devastated to find out that, in order to feel better, she had to eliminate her favorite foods from her diet.

Christina knew there was no way she would be able to live without cake and frosting, so after six long, sweet-free years of research, this single mom of two little girls launched Mindful Cupcakes and is changing the world one cupcake at a time! Her daughters can eat cake every day for their health and she has never looked or felt better eating 3 cupcakes a day!  But what Christina is most proud of is that numerous children suffering from severe allergies have been able to enjoy cake and frosting for the first time in their lives!

Mindful Cupcakes uniquely offers an alternative to people with food allergies.  Their products actually taste like the real thing and, the best news is, they help with weight loss and curb cravings so cupcakes can be eaten every day without guilt!

“We are really changing people’s lives and have had customers who have not been able to eat a cupcake in 15 years!” says Christina. “Kids with food allergies are able to have delicious cupcakes or cake for their birthdays!”

Why Nevada?
As a single mom with two little girls, Christina knew that California would not be the ideal location to start a company. She wanted a place that allowed her to truly grow a business without having to worry about large business costs, she chose Nevada!  Starting her business in Nevada came with a lot of perks, not least of which is the support from the community.

Christina says, “Nevada is an amazing place for an entrepreneur.  There are many resources and the cost of living is very reasonable.”

Christina supports local whenever she can and currently purchases some of her bulk ingredients from Great Basin Coop.  She also knows how important our honey bees are and donates 5% of her revenues to Honeylove.org.

Mindful Cupcakes is a certified paleo bakery offering cupcakes, breakfast loaves, specialty cakes and frostings that are gluten free, grain free, refined sugar free, dairy free, and soy free.
